Inspired by a favorite from Leaf & Grain, this version is reimagined through a personal twist and a few thoughtful substitutions.
INGREDIENTS
Sweet potatoesEdamameChickpeasTofuCauliflowerOlive oilDressing — balsamic of choice (a honey mustard variation was used here)Preheat air fryer to 375°F
Lightly coat vegetables with olive oil and a pinch of salt to taste
Cook each ingredient at 375 degree Fahrenheit for 10-15 minutes, or until golden with lightly crisp edges. (timing may vary slightly)
Assemble bowl
Add dressing and serve
