The Veggie Bowl Remix

Inspired by a favorite from Leaf & Grain, this version is reimagined through a personal twist and a few thoughtful substitutions.

INGREDIENTS

Sweet potatoes
Edamame
Chickpeas
Tofu
Cauliflower
Olive oil
Dressing — balsamic of choice (a honey mustard variation was used here)

  1. Preheat air fryer to 375°F

  2. Lightly coat vegetables with olive oil and a pinch of salt to taste

  3. Cook each ingredient at 375 degree Fahrenheit for 10-15 minutes, or until golden with lightly crisp edges. (timing may vary slightly)

  4. Assemble bowl

  5. Add dressing and serve
